Oh, and in the spirit of full disclosure, I think my mom got this recipe from an old neighbor, but my mom made it for us all the time and then shared the recipe with me, so I consider it "Mom's" Cheesecake.
Cream cheese of course is the main ingredient...
These are the only other ingredients:
Adding the eggs one at a time to the cream cheese/sugar/vanilla mix...
The final mixed batter is pretty runny.
Pour it in the crusts and put in the oven...
While the cheesecake is cooking, clean the mixer and make the icing for on top. Only three ingredients - mostly sour cream.
Making the icing.
Fully baked cheesecakes, out of the oven and ready to be iced.
The icing is ready too... I never use all of what it makes, but you can. It just depends how you like it. I like just a very thin layer of sour cream icing on top of mine.
Fully iced, and ready to go back in the oven to bake for 5 more minutes.
Ingredients
Cheesecake:
3 softened 8oz. packages of cream cheese
1 tsp. vanilla
1 c. sugar
4 eggs
2 pre-made graham cracker crusts (or make your own)
Sour Cream Icing:
1 8oz. container of sour cream
2 Tb. sugar
2 tsp. vanilla
Directions:
- Preheat oven to 350 degrees.
- Mix cheesecake ingredients one at a time with electric mixer.
- Pour into crusts.
- Bake 30-40 minutes, until small cracks begin to form around the edges.
- To make the icing, mix the three ingredients with an electric mixer.
- Smooth icing over the cheesecake, and then bake for 5 more minutes.
- Let cool.
- Cover with fruit topping if desired.
- Refrigerate and serve cold.
